A seasoned cornbread crust topped with all the taco fixings!
I have been waiting to share this recipe because it is so good. It has all the flavors of a classic taco casserole and has a creamy cornbread crust. How can you go wrong with cornbread?
The cornbread crust starts with a box of Jiffy cornbread mix, no measuring cornmeal or baking ingredients! Then you add creamed corn, milk, and eggs like you usually would with cornbread. But since this isn’t just cornbread, you will add green chilies and taco seasoning to give the cornbread an extra kick. Seriously, the cornbread is my favorite part of this recipe. Comfort food. Mmmm.
After the cornbread is almost cooked through, you will top with taco meat and cheese. Then it will get baked again until it’s extra melty and delicious. I topped my casserole with lettuce, tomatoes, and cheese but feel free to get creative! Some other toppings that would be yummy: refried beans, Doritos, Fritos, avocado, onions, sour cream, or salsa. Add whatever your favorite taco toppings are!
This casserole makes a huge batch and you will be glad because you won’t be able to stop eating it! Everyone will be having seconds (and thirds) of this taco cornbread casserole!
- 1 (8.5 ounce) box of Jiffy cornbread mix (dry mix only)
- 1 (14.75 ounce) can of creamed corn
- 1 (4 ounce) can diced green chilies
- ⅓ cup milk
- 1 large egg
- 1 (1 ounce) packet of taco seasoning, divided
- 1 lb ground beef
- ¼ cup water
- ⅓ cup mild taco sauce
- 2 cups shredded cheese, divided
- 2 cups shredded lettuce
- 1 medium tomato, diced
- Preheat oven to 350 degrees. Spray a large casserole dish with non-stick cooking spray and set aside.
- In a large bowl, mix together the cornbread mix, creamed corn, green chilies, milk, egg, and 1 tablespoon of the taco seasoning. Mix until well combined and pour into the casserole dish. Bake for 30 minutes.
- Meanwhile, in a medium sized pan, brown the ground beef and drain the excess fat. Add the remaining taco seasoning and water and cook until bubbly. Remove from heat.
- After the cornbread is cooked, remove from oven and top with the ground beef, taco sauce, and 1 cup of cheese. Return to the oven and bake for 15 minutes. Remove from oven and top with shredded lettuce, tomatoes, and remaining cheese. Serve immediately.
