These will be the best blueberry biscuits you’ve ever had, filled with juicy blueberries and crispy buttery edges.
The name of this recipe will not disappoint! This one of those recipes that I make over and over again because they are SO GOOD! Plus they are thrown together in just a couple of minutes, perfect for a lazy Saturday morning.
These biscuits start off with flour, sugar, baking powder, and salt. You will then add in cold milk. The key to this recipe is the frozen butter, grated with a cheese grater. The frozen butter will melt in the dough as the biscuits are cooking and form little pockets which makes them so moist and tender! Plus it gives them the crunchy edges that make these biscuits oh-so-good.
The biscuits are topped off with a simple powdered sugar glaze. I would not suggest skipping the glaze as the biscuits themselves are not very sweet.
Try these biscuits next time you have company for breakfast, they are sure to be a crowd pleaser! Or just make them for yourself, they are even better when you don’t have to share.
- 2 cups all-purpose flour
- ⅓ cup sugar
- 4 teaspoons baking powder
- ¼ teaspoon salt
- 1 cup milk, very cold
- 5 tablespoons butter, frozen
- ½ cup blueberries, fresh or frozen
- 1 cup powdered sugar
- 2 tablespoons water
- 1 teaspoon vanilla
- Preheat oven to 450 degrees. Spray a baking sheet with non-stick cooking spray and set aside.
- In a medium sized bowl, combine the flour, sugar, baking powder, and salt. Mix in the milk and stir until a dough begins to form.
- Use a cheese grater and shred the frozen butter. Sprinkle the frozen butter into the dough, while mixing, until all the butter is incorporated into the dough. Fold in the blueberries.
- Sprinkle flour on the counter and scrape the dough onto the floured surface. Sprinkle a little more flour on top of the dough and roll out until dough is about 1 to 1 ½ inch thick. Use a round cookie cutter to make circle shapes and place on the prepared baking sheet.
- Bake for 9-10 minutes or until golden brown. Watch them as the cook as they can burn quickly.
- While the biscuits bake, whisk together the powdered sugar, water, and vanilla until smooth.
- Allow biscuits to cool slightly and drizzle with prepared glaze. Biscuits are best if they are enjoyed immediately.
