Grilled cheese sandwiches are so easy to throw together for the kiddos for lunch.  Unfortunately, Kayden HATES grilled cheese sandwiches (I know right?! what is wrong with her!)  So I make these grown up grilled cheese sandwiches when she wants her favorite kid food: boxed mac and cheese (yuck).

Pesto and Sun Dried Tomato Grilled Cheese Mozzarella, pesto, and sun dried tomatoes are the best combination of flavors!  One of my favorite dishes is this Pesto Pasta and this grilled cheese sandwich has a very similar flavor.  Next time the kids want grilled cheese sandwiches, add a little pesto and sun dried tomatoes for your own grown up grilled cheese!

Serves: 4 sandwiches
Ingredients
  • 8 Slices French bread
  • 2 tablespoons butter
  • 4 slices mozzarella cheese
  • 3 tablespoons pesto
  • ¼ cup sun dried tomatoes, roughly chopped
Instructions
  1. Heat a large skillet to medium high heat
  2. Butter one side of each slice of bread. On the opposite side from the butter, spread the pesto on four of the slices of bread. Add mozzarella slices and sun dried tomatoes and top with remaining four slices of French bread, butter side up.
  3. Place on skillet and cook until browned on each side and the cheese is melted. It usually takes about 5 minutes per side, depending on the heat of your skillet. Serve immediately.
