Brown rice tossed with vegetables and tossed with a peanut sauce.
We love stir fry recipes at our house. They are a quick and easy go-to dinner that can be thrown together quickly. (Anyone else out there with a toddler who needs to eat NOW?)
This peanut rice is very similar to my peanut butter stir fry recipe. I just LOVE the peanut sauce that gets tossed in with that stir fry recipe so I decided to make a similar recipe using rice. The sauce used in this dish starts with chicken broth and soy sauce but has peanut butter and honey mixed in for sweetness. The garlic and ginger give the sauce an extra boost of flavor to make this sauce perfect. Once the sauce is made, you just toss it with the rice and vegetables and you have a delicious side dish or meal!
- ½ cup chicken broth
- 3 tablespoons soy sauce
- 3 tablespoons creamy peanut butter
- 2 tablespoons honey
- 1 teaspoon ginger
- 2 cloves garlic, minced
- 5 cups cooked brown rice
- 1 cup steamed mixed vegetables
- ½ cup chopped peanuts
- In a small saucepan, add the first six ingredients and whisk on medium high heat until lightly boiling. Remove from heat and toss with the brown rice, vegetables, and peanuts. Serve immediately while still hot.
