Taco Cornbread Casserole

Ingredients
  • 1 (8.5 ounce) box of Jiffy cornbread mix (dry mix only)
  • 1 (14.75 ounce) can of creamed corn
  • 1 (4 ounce) can diced green chilies
  • ⅓ cup milk
  • 1 large egg
  • 1 (1 ounce) packet of taco seasoning, divided
  • 1 lb ground beef
  • ¼ cup water
  • ⅓ cup mild taco sauce
  • 2 cups shredded cheese, divided
  • 2 cups shredded lettuce
  • 1 medium tomato, diced
Instructions
  1. Preheat oven to 350 degrees. Spray a large casserole dish with non-stick cooking spray and set aside.
  2. In a large bowl, mix together the cornbread mix, creamed corn, green chilies, milk, egg, and 1 tablespoon of the taco seasoning. Mix until well combined and pour into the casserole dish. Bake for 30 minutes.
  3. Meanwhile, in a medium sized pan, brown the ground beef and drain the excess fat. Add the remaining taco seasoning and water and cook until bubbly. Remove from heat.
  4. After the cornbread is cooked, remove from oven and top with the ground beef, taco sauce, and 1 cup of cheese. Return to the oven and bake for 15 minutes. Remove from oven and top with shredded lettuce, tomatoes, and remaining cheese. Serve immediately.
