Black beans, hominy, and tomatoes make this chili extra hearty with a secret ingredient to combine all the flavors together.
This vegetable chili is so hearty and flavorful you will never miss the meat. The chili starts off with vegetable broth and canned tomatoes steamed in the microwave. If you have fresh tomatoes, feel free to use those (as long as you don’t mind the peals)! I have made it with canned and fresh and both ways were delicious.
Next, you will sauté some onions and peppers in some olive oil. What ever color bell pepper you have on hand will work. I used green this time but red or yellow will taste great too! Once the vegetables are slightly softened you will add a delicious combination of spices and sauté until fragrant. It smells so good at this point! Mmmmm!
Once the vegetables are smelling ddddelicious you will add the broth and tomato mixture, black beans, and hominy and let it cook for a while so all the flavors blend together. Once it has simmered for a while you will add some garlic and the secret ingredient: bittersweet chocolate. It sounds gross to add chocolate to a soup recipe, right? The bittersweet chocolate is a must in this recipe! It makes it so rich and hearty, just like chili should be!
It has been sooo cold this week in Wisconsin (it was even snowing today, YUCK) so this chili is perfect to warm you up!
- 4 cups vegetable broth
- 1 can petite-diced tomatoes (14.5 ounces)
- 1 tablespoon olive oil
- 1 medium sized onion, diced
- 1 bell pepper, diced
- 3 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- 2 cans black beans, drained & rinsed (15.5 ounces)
- 2 cans hominy, drained & rinsed (15 ounces)
- 2 garlic cloves, minced
- 1 ounce bittersweet chocolate
- In a large microwave safe bowl, combine vegetable broth and tomatoes. Cook on high heat in the microwave for 5 minutes or until steamy hot.
- In the mean time, heat olive oil in large pan on medium high heat. Add onion and pepper and sauté until soft. Add the chili powder, cumin, and oregano and stir until fragrant, about 1 minute. Add the broth-tomato mixture, black beans, and hominy. Cover and let simmer for 30 minutes.
- Once the chili is done simmering, add the garlic and bittersweet chocolate. Stir until the chocolate is completely melted and mixed in with the soup. Serve immediately.
